I generally use TinyMCE. But I remove any of the functions which will allow them to mess the styling up, including things like colour, font family etc. and instead allow them to style their pages with headings, paragraphs etc., that way I can control what their content will look like via CSS.

There are lots of other WYSIWYG editors out there and many of them are just as good as TinyMCE. I recommend trying a bunch until you find one you are comfortable with.
