Default Bloated CMS's

I've been trying to add more and more functions lately into existing smaller pieces of software to use them as CMS's, in particular WordPress and SMF. Because of the hassle and difficulty in expanding crude CMS's or programs designed for other purposes to suit my needs, I'm considering learning how to use a more traditional, albeit bloated, full blown CMS like Drupal, Joomla, Mambo and XOOPS but I'm not sure which one to use.

Do any of you have any experience with these? Do any of you have any preference? And if so, why? Or is there another CMS you prefer?

I'm particularly interested in a free (GPL preferable) system which has a good templating system which gives me complete control over the HTML and CSS of the site.

I briefly tried Joomla, I installed it, got confused and gave up as at the time I could do everything I wanted with something simple like WordPress. However times change and I now need more features. So if any of you have any advice I'd love to hear.
